چکیده

Every year large amounts of residues accumulate from potato processing. The aim of this study is to develop a process to valorize these residues as feedstock for lactic acid fermentation in a way that is suitable for industrial production. An enzymatic hydrolysate obtained from potato residues (46 % w/w dry mass starch) was used as a substrate in batch and fed-batch fermentations with Lactobacillus casei. Supplementation of yeast extract (3 g L–1) was required to improve productivities. Despite the inhibitory effect exerted by phenolic compounds in the medium, reasonably high lactic acid concentrations (102 g L–1) and yields (92 %) were obtained, with 92 % (L-isomer) optical purity. It was clearly demonstrated that potato residues are suitable as feedstock for large-scale production of technical grade lactic acid and that the developed process is promising for large-scale biorefinery applications.

Direct fermentation of potato starch and potato residues to lactic acid by Geobacillus stearothermophilus under non-sterile conditions

BACKGROUND Lactic acid is an important biorefinery platform chemical. The use of thermophilic amylolytic microorganisms to produce lactic acid by fermentation constitutes an efficient strategy to reduce operating costs, including raw materials and sterilization costs. RESULTS A process for the thermophilic production of lactic acid by Geobacillus stearothermophilus directly from potato starch...

Cell Entrapment of Lactobacillus casei subsp. casei ATCC 39392 for Lactic Acid Production

In this study, lactic acid production by repeated batch fermentation using cell entrapped methods was compared. Barium alginate beads, agar gel and polyurethane foam cubes were employed as carriers to immobilize Lactobacillus casei subsp. casei for the purpose of L (+)-lactic acid production. Increasing concentrations of lactic acid during fermentation were better tolerated by barium alginate e...

Comparison of Lactic Acid Isomers Produced by Fungal and Bacterial Strains

Many organisms produce lactic acid by fermentation, but most industrially important strains are from the genus Lactobacillus and Rhizopus oryzae. L(+)-Lactic acid is the only optical isomer for use in pharmaceutical and food industries because human body is only adapted to assimilate this form. In this research, six strains of Lactobacillus and four strains of R. oryzae (known as high producer)...

Thermal processing determination time for fermented and acidified indigenes Iranian vegetables

Vegetables may be preserved by fermentation, direct acidification, or a combination of these, along with pasteurization, to yield products with an extended shelf life and enhanced safety.  Effect of lowering the pH, either by adding acid or lactic fermentation, on thermal process requirements for canned vegetables was investigated. Malic acid was preferred for acidification of canned vegetables...
